Raw Vegan Blueberry Ice Cream | VIDEO

Does anyone out there love ice cream as much as I do?? I used to work at an ice cream shop, and boy was a feeling like CRAP. This is ice cream that makes me feel AMAZING and it does not compromise taste for health.  It is sweet, smooth, thick and creamy and can be made the way you like with whatever animal free ingredients you have. Feel high on life all day eating ice cream for breakfast, and reap the benefits of all the cell and DNA protecting antioxidants, phytochemicals, and anti-inflammatory properties.

Serves 1:  ~336 Calories

  • Uses food processor or high speed blender.
  • Easy, takes about 5 minutes.
  • Prep: Freeze 2 ripe bananas for 6 hours or overnight

Ingredients:

  • 2 frozen ripe bananas (peeled before freezing)
  • 1 ripe banana
  • 1/4 cup fresh or frozen blueberries

Memorial Day Watermelon Salad and Video

In honor of Memorial Day, I decided to make my favorite watermelon salad with mint and lime.IMG_20150525_094125The mint reminds me of my Grampa, who served in the army in World War II.  This is a great side dish or breakfast that is perfect for hot weather.  I uploaded a short video that shows how easy it is to make.  To watch the video, click here.

Watermelon

The search for refreshing stops here.  Watermelon is of course hydrating, but is also high in vitamins and minerals.  The red color of watermelon provides the incredible antioxidant lycopene, which was shown to be effective in preventing skin damage from the sun in tomatoes according to a study published in the British Journal of Dermatology.  Watermelon also provides vitamins like vitamins A, B6, and C and minerals like potassium, copper, and magnesium. According to USDA’s supertracker, 1/4 watermelon provides 7g of protein.

Mint

It is incredible how mint grows everywhere like crazy, but it costs $4.00 to buy a tiny organic package of it wrapped in plastic at the grocery store.  I highly recommend growing it yourself and throwing it into everything.  It is delicious in salads, wraps, smoothies, and the flavor is not overpowering.  I love it blended with frozen bananas for a refreshing mint ice cream.  This mint can also be used as a great herbal tea.

Lime

I recommend a squeeze of lemon or lime on everything.  It adds vitamin C which is necessary for absorption of iron.  Many female vegans ask me how I get enough iron and eating nutrient dense foods is my first answer, but I am also intentional about my squeeze of lemon or lime juice.  Plants are abundant in minerals like iron, but the delicious vitamin C from lemons and limes adds great flavor to any bland meal and provides the antioxidants and vitamins necessary to help absorb all of my nutrients.

Raw Japanese Recipes

What a fun interactive demo!  Everybody learned how easy it is to make raw veggies taste delicious, and got to roll their own sushi!  We made Miso Soup, Ginger Citrus Zoodles, Jicima Rice, Sushi, and Green Tea Nice Cream!

Miso Soup: adapted from minimalistbaker

Ingredients

  • 4 cups water
  • ½ cup kale, chopped
  • ½ cup green onion, chopped
  • ¼ cup mushrooms, chopped
  • 3-4 Tbs white miso paste
  • 1 sheet nori cut into rectangles

Steps

  1. Bring water to low simmer
  2. Add nori and simmer for 5-10 minutes
  3. Add remaining ingredients and cook for 5 minutes or so
  4. To ensure miso doesn’t clump, stir it in through the strainer
  5. Taste and add more miso if desired. Serve warm

Ginger Citrus Zoodles: Adapted from Megan Elizabeth

Noodles

  • spinach
  • ½ cup spiralized or shredded carrots
  • ½-1/3 small red pepper sliced thin
  • 3 ½ – 4 cups spiralized zucchini

Dressing

  • ½ cup orange juice
  • 1/3 cup cashews
  • ½ cup fresh cilantro
  • 1/3 cup scallions
  • 2 Tbs lemon or lime juice
  • 2-3 big sage leaves
  • Quarter sized slice of ginger
  • 1 ½ Tbs raw tahini

Steps

  1. Put noodles in a big bowl together
  2. Blend all dressing ingredients until creamy
  3. Massage dressing in noodles and let sit 10-15 mins
  4. Put greens on plate (spinach, mixed greens), noodles on top of greens, and garnish with sprouts.

Jicama Rice Papaya Sushi: adapted from Megan Elizabeth and The Life Regenerator

Ingredients (whatever veggies you want!!)

  • Nori sheets
  • 2 jicamas
  • Papaya spears
  • Carrot
  • Celery
  • Green onion
  • Alfalfa sprouts
  • Bell pepper
  • Medium ripe avocado
  • Lime

Steps

  1. Grate jicama and squeeze out excess water using nut milk bag
  2. Layer rice and veggies on nori sheet
  3. Using 2 fingers, wet the end of the nori sheet with lime or water to get it to stick
  4. Slice sushi with very sharp knife
  5. Serve with gluten free soy sauce or Ginger Citrus Dressing

Green Tea Nice Cream

Ingredients

  • 1 heaping Tbs fresh roughly chopped peeled ginger
  • 1-2 Tbs hulled hemp seeds
  • 1 serving packet of matcha green tea powder (like $1.00 each packet at Sunspot)
  • 3 ripe peeled and frozen bananas (freeze for at least 6 hours)
  • 1/2 cup frozen mango chunks
  • water as needed to not break your blender or food processor

Steps

  1. Using a food processor S blade, or high power blender, put in the ginger, hemp seeds, and mango chunks
  2. Sprinkle in the green tea powder I like to put this in the middle so it doesn’t get stuck to the bottom of the container, but no biggie
  3. Break up bananas into fourths and throw in container
  4. Blend until smooth

Strawberry Cookie Dough Pudding, Inspiration, and High On Life Salad

I’ve learned a LOT about nutrition and fitness, everyday becoming more and more confident in this amazing raw vegan lifestyle.  These past few days I have eaten 100% raw, very low fat, and I have MORE ENERGY THAN I KNOW WHAT TO DO WITH!!

As if springing out of bed before your alarm goes off, or running a mile just because theres a jumping bean inside you that needs to be released weren’t enough.. the clear glowing eyes, silky smooth skin, and superhero S shaped shits are definitely worth learning more about this lifestyle.  I recommend high carb FO SHO!! BUT: I would like to point out that I work out a pretty decent amount, and we can’t all survive 40 days on eating nothing but bananas and dates like Freelee.  Going from scrawny to strong takes a little increase in protein intake- maintenance of muscle mass does not require any increase in protein.  I have been craving the dark leafy greens and goji berries, especially after my workout-pro, stud friend Davis got me to up the weight on the squat rack!  This bowl of beauty hit the spoooooot!  The holistic health counselor that I seasonally assist, Christine Lucas, explained at one of her classes that sprouts are the most nutrient dense foods on land- SO many available amino acids!  In high school, I used to sprout oat groats, and various other grains instead of cooked oatmeal.  These sprouted little wheat berries are so divine blended with fruit like this!

Here’s what you’re going to need:

  • over a cup of sprouted soft wheat berries
  • about 7 whole strawberries (with greens on! yaay extra greens! 😀 )
  • less than a teaspoon of chia seeds ( with the mass amount of fruit in my smoothies I ran into a little candida issues putting tablespoons of hemp and chia in there as well- be wary mixing fats with fruit and high sugar foods- it keeps the insulin from clearing from the blood causing issues! )
  • about 2 tablespoons of goji berries

Blend everything except goji berries until smooth! Swirl in the goji! Super easy! Enjoy!

I have been experimenting with raw veganism for about over 3 years now, and have had quite a rough time, mostly because of social settings, general stigmas, and contrasting beliefs.  I have been lucky enough to have had a senior in dietetics, Tressa Massaro reawaken the confidence in me.  Tressa knows the facts.  The credible information behind it all to be 100% sure!  When I first met her she told me how amazing it was to discover in lab how much protein there was in kale!  I am so glad she re-inspired me!  FULLY RAW FO LIFE!!  This lifestyle can not only prevent but REVERSE sooo mannyy diseases.  It’s unreal.  BUT IT IS REAL.  BELIEVE IT.

She gave a RAWESOME food demo at the pole fitness place she goes to in Merrillville, IN.  My fantastically spontaneous and adventurous friend Davis went with me to it and we ended up having such a wonderful evening!  Tressa’s family owns a beautiful store, “Produce Depot”.  We got a ton of fresh organic ❤ produce and made dinner at her house!  We also had fresh juices and immune shooters (ginger shots) from the depot!  This is what we made:

High On Life Salad:

  • 4 bunches of dinosaur kale (chiffinade)
  • about 5 carrots (potato peeled)
  • 1 zucchini (potato peeled)
  • 1 yellow bell pepper (sliced thin/ chopped)
  • chunks of pineapple
  • raisins
  • goji berries

Drizzled with all this blended until smooth in a high speed blender:

  • 3 oranges
  • about 10 pitted dates
  • juice of one lemon
  • a couple of handfulls of fresh mint leaves (to taste)
  • about 2 tablespoons of chopped ginger (to taste)
  • 1 champagne mango
  • 2 tomatoes

Even Tressa’s family and Davis enjoyed this!  SO MUCH LIFE FORCE ENERGY! We were high on life after all this amazing food.  I even got a text from Davis that night after he dropped me off at home, “I feel awesome right now”.  There is no question about it- eating healthy makes a huge difference!  Let’s see you give it a go! xoxo !!! ❤ ❤ ❤

Green Tea Nice Cream

After my first lick of this ice cream I said out loud…

“I AM A GENIUS.”

Impeccable amount of ginger, sweetness, and green tea.  The absolute palate cleansing dessert or, indulge, like me, in this for a post workout lunch!

I love green tea and have been reading more and more benefits about it.

Green Tea (matcha):

  • is the least oxidized and fermented non-herbal tea, so it contains the most antioxidants
  • contains a nice amount of caffeine (less than coffee or black tea, more than herbal tea)
  • is used traditionally in Chinese medicine to help with immune function, brain cell protection, blood sugar regulation, metabolism, aging, blood pressure, and many other health issues

Ginger is so warm, aromatic, enlightening, and soothing.  The health benefits to ginger are also endless as well.

Ginger:

  • is a powerful digestive aid: In herbal medicine, ginger is regarded as an excellent carminative (a substance which promotes the elimination of intestinal gas) and intestinal spasmolytic (a substance which relaxes and soothes the intestinal tract), also helps with nausea (hence the ginger ale mom and dad gave you when you had an upset tummy)
  • I sent my sister (who has Ulcerative Colitis) this interesting study with ginger and inflammation of the colon:

    Inflammation of the colon

    A study carried out at the University of Michigan Medical School found that Ginger Root Supplement administered to volunteer participants reduced inflammation markers in the colonwithin a month.

    The study was published in the journal Cancer Prevention Research.

    Experts say that inflammation of the colon is a precursor to colon cancer. Co-researcher Suzanna M. Zick, N.D., M.P.H., explained that by reducing inflammation in the colon a person reduces their risk of developing colon cancer.

    Zick said “We need to apply the same rigor to the sorts of questions about the effect of ginger root that we apply to other clinical trial research. Interest in this is only going to increase as people look for ways to prevent cancer that are nontoxic, and improve their quality of life in a cost-effective way.”

  • clears the sinuses (great to make tea out of if you have a stuffy nose!
  • too many benefits- I don’t have all day!!!

Hemp Seeds:

  • incredible vegan source of biologically available and easily digested protein, hemp seeds contain all 10 essential amino acids
  • incredible vegan source of essential omega-6 and omega-3 fatty acids
  • rich in plant based phytonutrients and antioxidants, such as vitamin E
  • contain an array of minerals like zinc, calcium, phosphorous, magnesium, and iron

The Mastermind Mix:

Raw Vegan Biscuits and Gravy! (fat and gluten free!)

Ohh biscuits and gravy!  I thought you said bananas and datey!!

Sunday mornin’ soul food baby.  Sweet, smooth, juicy, and hearty.  This will fill you up, and you actually will not be in a coma!! Haha, carb up and seize the day!

The Biscuits:

  • cinnamon
  • bananas (sliced)
  • apples (mandolin thin)
  1. Thinly slice your fruit
  2. Using a straight cylinder coffee mug, get a layer of cinnamon on the bottom so the apple doesn’t stick.  then alternate layers of apples and layers of banana slices.  Once the mug is about 1/3 – 1/2 way full, press layers down firmly.  Run a knife around the outside of your biscuit in the mug and flip the mug forcefully into your hand or a small plate to get the biscuit out.
  3. Repeat and place biscuits on plate as desired.

The Gravy:

  • raisins (a few handfuls)
  • oranges (2-3)
  • dried apricots (like 6)
  • coconut date rolls (or dates – 5)
  1. Using a high speed blender or food processor, blend until smooth.  Add more orange sections to make it thinner, add more dried fruit to make it thicker.
  2. Pour / spoon over biscuits.
  3. Garnish with fruit and whatever else sounds good!
  4. Happy Sunday!!

5 Secrets To Happiness

Yesterday at our staff training at the CoRec, keynote speaker Marty Green inspired the crap out of me!  He described me to a T- the way I wouldn’t let myself have any fun last semester.  How students procrastinate, are sleep deprived, and have more anxiety than any age group.  Last semester I hated my life.  I was struggling in biochemistry and complaining and  I would feel to guilty to have a little fun, for I should have been spending all of my time studying!

Well Mr. Green has got be looking on the bright side this semester!  These are my twist on 5 of his secrets to thrive!

1. Pursue Purpose and Chase Meaning

Identify what is worth the effort and understand what is worth the struggle.  Saying “I don’t have enough time to…” should really be, “I have enough time, I just choose to put my time into doing something else.”  This is about dedicating an hour every day to completely goof off doing something that you 100% are choosing to do because it brings you joy.  This is an investment to yourself so you have the capacity to be able to sit down and focus later.  Otherwise, you will cry and die and procrastinate and stay up until 2am like most poor college students.

2. Intentional Choices

Saying, “I choose to, prefer, want more than I have to” is Intentional Living.  Saying, “I have to, I should, I must” leads us to live miserable lives devoid of fun!!  Know that everything you do, you are doing by choice!  Although I cried in every biochem lab, in reality I did CHOOSE to go to college and to go to class each day!!  Although I would have had negative consequences if I did not go, I should have reminded myself each time that there is no learning without being challenged.  Failure is the best teacher.  I came to school to learn, not to float about- and with the realization that I want to go to class, it all of a sudden becomes a fantastic day! Yay class!

3. Gratitude Attitude

My new goal: say at least 3 things I am grateful for everyday, and STOP COMPLAINING! Oh my gosh! I am the luckiest girl in the world, it is digusting how conversations turn into complainy vent seshs all the time! And if anyone tries to complain to me I’ma smack a hoe!  Go live as a starving  orphan and then we’ll talk! (haha, complaining about complaining :-/ oops)  If we keep being grateful and positive, positive energy will radiate out of us, and we will be overall happy, loving, rawesome people, spreading goodness :).  A happy girl is a beautiful one ❤

4. Be Involved and Engaged in Something That Is Bigger Than You

To me, this screams VEGANISM. But it can apply to many things, your job, your sorority, any kind of group you might be involved in.  Realize that you are an important person in this incredible life you live, and what you do everyday has an amazing positive impact on a lot of people! So, enjoy it and keep it up!

5. Vitalize Your Vessel

Participate in enjoyable movement and cultivate a learner’s mind.  Be in the moment and appreciate the beautiful body you were blessed with.  This means paying attention in class, less screen time, and get your body moving and start eating a healthy plant based diet!  You are to beautiful to not 🙂  And quit the negative self talk!

This is kind of a big dill

Ya, this dressing… it’s a huge dill.  This beautiful bowl made by Samwise that I was supposed to share with him… I ended up eating most of it…sorry… :-/ it was too GOOOD!!!

The Big Dill Dressing

This sweet savory tangy sauce is such a BIG DEAL!  It makes a salad not only unbelieveably good, like your eating some expensive linguini, but it keeps it fat free, cleansing, oxygenating, energizing, and gives the whole slew of benefits that these ingredients bring!  Who knew fiber and a few fresh herbs could be so fabulous?!  Please try this.  And share with loved ones ❤ Nothing beats sharing health and deliciousness like this!!

This has got spiralized zucchini, okra, cherry tomatoes, collars, romaine, sunchoke, cucumber, celery… and anything else you got in the fridge that you wanna throw in 😉

  • Squeeze whole lemon
  • ¼ cup dill
  • 5 dates
  • 2 inches of celery
  • 1 inch of zucchini
  • a whole tomato
  • 2-3 tsp caraway

Blend everything except the dill until creamy.  Pulse in the dill until well mixed.  It should come out thick, creamy, cleansing, and rawdonkulously delish!!  Savor, savor, savor!!

French Toast Kale Chips

These are SUCH tasty twist! French toast, meet kale chip! So good. So. Good.frenchtoastkale2

Ingredients

  • 1 cup fresh apple (or dried apples, soaked & drained, just add 1/4 cup more water)
  • 1 cup cashews, soaked & drained
  • 3/4 cup distilled water
  • 3/4 cup maple syrup
  • 1 Tbsp cinnamon
  • 2 tsp lemon juice
  • 2 tsp vanilla
  • Sea salt to taste
  • 1 bunch kale, washed, trimmed & stemmed

Directions

  1. Combine all ingredients except kale into a blender.
  2. Blend until smooth; add sea salt to taste.
  3. Massage kale with the apple mixture until coated
  4. Place on Excalibur ParrFlex sheet and dehydrate for 8 to 10 hours or until desired consistency is reached.
