Hi! Oil is EONS more health promoting than animal fat from eggs, cheese, meat, ice cream, etc. However it is still a concentrated source of liquid fat. No fiber, minimal nutrition, fat absorbed quickly and is detrimental for my patients and clients who have heart disease, high triglycerides, prediabetes or active diabetes, and in general I don’t recommend eating it. Even if you press yourself. Just eat the whole olive with all the fiber and nutrients! Hope that helps 🙂
